- 1-2 Belgian endives and/or taco shells for the rest of the family
- 1 lb Laura's lean ground beef (96% fat free)
- Low sodium taco seasoning
- Small jar hot salsa
- Toppings such as:
- black olives
- low fat shredded cheese
Brown the meat and add taco seasoning. When done, stir in about a 1/2 cup salsa (this adds a little more volume and flavor to the meat). Separate the endive "stalks/leaves" for your boats and fill with taco meat. Top with additional toppings and enjoy!
I had 5 "boats" for 315 calories! Super filling too, so I didn't eat a side.
Amazing, easy, everyone is happy and you get a BOMB.COM taco salad with the leftovers for lunch the next day! A winner in my book.
