First off, thanks for the sweet comments on yesterday's post. The number one reason we do this is because of the positivity in this community - it makes us wanna keep up this healthy lifestyle we've got goin on!
I've got two things for ya today, then I'm off to kick the rest of my busy week's ass. First up, Skinny Taco Dip! This is from one of my favorite websites, SkinnyTaste, which is all about those lightened up recipes we all know and love. I made this as an appetizer for my family this past weekend and it was GONE within an hour (I may or may not have eaten half of it myself). The best part, is that it took about 15 min to prepare! No cooking, just throw it together and put that magic on the table!
Skinny Taco Dip
- 8 oz. package 1/3 less fat cream cheese
- 8 oz. fat free sour cream
- 15.5 oz. jar hot salsa
- 1 packet reduced sodium taco seasoning
- 2 cups 2% shredded reduced fat mexican cheese
- 1 small bag shredded lettuce
- 2 large tomatoes, diced
- 1 small can sliced olives
- multigrain tortilla chips or celery for dipping
Mix cream cheese, sour cream, salsa and taco seasoning together. Spread on the bottom of a 9 x 13 dish. Top with lettuce, tomatoes, cheese and olives. Serve and watch your family/friends devour.
In Kristie's world, this is old news - she has been running five miles at a time since forrrreeevvvvvveeerrrr. But she convinced me to join her on Saturday morning, so I did. It was a beautiful Kentucky day and we ran on some old country roads near our parent's lakehouse. It wasn't as hard as I thought it would be, even though we had to battle some high winds, the stench of cow patties, being chased by a pomeranian on the loose (and our brother-in-law, who our sis bet couldn't run 5 miles - they are sooo competitive so you know he laced up his shoes and hit the pavement with us) and being charged by some fierce cows. Okay they weren't charging us, but still it was scary that they all lined up and slowly walked towards us without blinking - BACK OFF BESSIE!! I think we may have a new fear of cows. I never did like milk.
Anyway, it was awesome to accomplish this with Kristie by my side, and I can't wait to do it again! One day, I will be one of those people who says "Oh I'm just going to do an easy 5 miles today" HA!!
