Try It Thurs: Spaghetti Squash in the Crock Pot

Kara G here! Today we are gonna talk spaghetti squash: my favorite skinny food. When I first discovered this little gem of the squash family jewels, I was excited but intimdated. Oh the pasta substitute possibilities! But how? I googled and googled and googled but all the cook methods either took too long (bake in the oven for an hour?) or terrified me (cover with saran wrap and microwave for 7.83 minutes? won't it catch on fire? OMG whats that hissing noise?!)

Not to mention this sucker is HARD to cut. I'm not skilled with knives in the first place, and trying to hack this thing in half is an emergency room trip waiting to happen. You can always ask your husband who will probably resent you for making him cut this stupid vegetable which you are going to make him eat when you could be having real spaghetti soo much easier but who doesn't wanna be
i-n-d-e-p-e-n-d-e-n-t do you know what that means!

Enter spaghetti squash in the crock pot. This is much easier and you can do it solo. Plus, after it has simmered for a few hours, you can cut it in half with no problem. I'm talking the knife will slice through it like buttah. No safety violations here!


This is all I do: Fill the ol' crock pot (and I do mean old, this one is a hand-me-down from the in-laws, I keep telling myself that brown color is trendy) about 4-5 inches of water. Place the whole squash in there. Set to low for 3-4 hours. I can tell it's done when I grab it with some sturdy tongs and the skin sort of "deflates" on the sides. I know that sounds weird, but it's totally fine - I just don't know how else to describe it.



Then cut it in half longways and scoop out the seeds. Use a fork to "comb" the spaghetti-like fibers out, and top with your choice of deliciousness! Boom! Spaghettigasm.

As a quick variation of Skinnytaste Cheesy Spaghetti Squash and Spinach. I simply put some parmesean, reduced fat cheddar, spinach, garlic salt & pepper and a drizzle of olive oil on top and it was amazing! Can't wait to make the real deal soon. Got this idea from my girl Kassie!


 
Topped with light/low sugar marinara sauce and goat cheese - another amazing combo!

 
Topped with Wu-Tang Beef & Broccoli (no it does not look good, yes it does taste SO GOOD!)

  1. I will definitely have to do this cos I am utterly terrified of horribly harming myself every time I cut it open...that's actually what deters me from buying it sometimes!!

  3. I have got to get in on the crock pot spaghetti squash! This post was hysterical. Nick def resents me making him slice ours, bake it, then force feeding it to him hahaha marinara sauce and goat cheese? Oh sign me up!

  4. LOL! OMG, YES. Pete doesn't even offer to cut the damn things for me anymore and I'm going to lose a thumb one of these days. I really need to get a crockpot timer because I work too far from home to start the crockpot 3-4 hours before dinner...Ooh! Maybe if I picked up one of those Christmas light timers!

  5. I like to layer it like a lasagna. Squash, sauce, low fat cheese, repeat and then bake it till the cheese is melted. :)
