Does anyone else have an overabundance of garden vegetables??? We've got a family of six, 4 sets of grandparents and co-workers and my counter still looks like a scene from Return of the Killer Tomatoes. Our garden is in high gear and I think my husband secretly gets his manhood affirmed when he comes in from outside with a zucchini the size of my forearm...anywho, besides eating tomatoes and cottage cheese errday for a snack, I'm trying to get creative with our free produce. Enter zucchini pizza which is super quick and delish!
1. Cut zucchini in half and remove seeds. Sprinkle with seasoning (I used plain ole' salt and pepper) cook in oven for 30-40 minutes at 375 until soft.
Other than pretending I'm Julia Childs, I've been getting 6 workouts in a week that follow a schedule below. I found an awesome weekly gym workout at Fitness and the City that I've been rocking and since I'm not looking at my scale, I'm proud that my clothes fit well despite my uhem festival, bonfire and fast food eating habits. Trying to get back in the swing of things since I always feel better when I eat better!
Weekly Workout Schedule:
Sunday: Run 4-6 miles (trying to up my mileage to get ready for the 10K on 9/28) and abs
Tuesday: 48 min on elliptical at home and 10 sprints outside, abs
Wednesday: 6 am gym workout: Legs, abs and 20 min on treadmill
Thursday: 6 am gym workout: Back and Chest, abs and 30 min on elliptical
Friday: 6 am gym workout: Arms, abs and 1 mile treadmill run plus 10 sprints
Saturday: Naptime gym workout: Shoulders, abs and run to and from gym (2 miles)
Here's a fun "before" pic I found while perusing my camera, I was exercising maybe 3 times a week, eating whatever I wanted and enjoying my pastiness in January of 2010. I had the hardest time finding an outfit to wear to this wedding and I'm a little sad that red pencil skirt doesn't fit anymore...
